What is your favorite supper for a hot summer evening?
When its hot I like a light salad and thats its. This is one recipe that I cannot get enough of. All the credit goes to Rachel Ray, it is her recipe
Celery Succotash Salad
2 Tbsp Dijon mustard
2 Tbsp honey, a healthy drizzle
Juice of 1 lemon
2 Tbsp red wine vinegar (eyeball it)
1/3 cup EVOO (extra virgin olive oil; eyeball it)
Salt and black pepper
1 celery heart, thinly sliced
1/2 cup shredded carrots
1-10 oz box frozen corn kernels, thawed
1-15 oz can chickpeas, drained
1/2 red bell pepper, chopped
1/2 small or medium red onion, chopped
2 Tbsp fresh thyme leaves, chopped
In a medium bowl, combine the mustard, honey, lemon juice, and vinegar. Whisk in the EVOO and season the dressing with salt and pepper. Add the celery, carrots, corn, chickpeas, bell peppers, onions, and thyme. Toss to combine the salad and adjust the salt and pepper to taste.
